Wild black rice is not rice at all, but rather an aquatic grass! First cultivated by Native Americans on the shores of the Great Lakes, it was a year-round staple of their diets. Today, you can use it to take your rice dishes to new levels. With a rich, nutty flavour that verges on the smoky and a deep black colour that turns into a delightful deep purple when cooked, it adds an exotic, tasty zing to the simplest of dishes.

The dark star of the Southeast Asian kitchen, wild black rice is packed full of fibre and antioxidants. Easily cooked on your stove top or rice cooker, you will be amazed by this unique grainy, earthy, sticky rice! Though sometimes called Black Glutinous Rice, wild black rice is actually a completely gluten-free food.

    To cook, rinse well and use the absorption method with two cups of water to every cup of rice. The grains can take up to one hour to cook, but pre-soaking will speed up this process. Alternatively, pop it in your rice cooker and let it do all the hard work for you!

    Works in both savoury and sweet dishes. A popular pudding rice in Southeast Asia, you'll often come across it cooked with water, coconut milk and a pandan leaf.
