    Boil 8 cups (2L) of waterAdd spaghetti and simmer gently for 7-8 minutes or until cooked throughRinse under cold water   For sauce: 400g coconut cream30g red curry paste25g ginger grated10g coriander choppedsalt and pepper2 tabsp olive oilRed and yellow pepper slicesParmesan cheese (optional) Pour first 5 listed ingredients into a pot and bring to boilHeat olive oil in skillet over medium heat Add peppers and cook for 4 -5 minutesMix the spaghetti with the sauce and add peppers and stirserve hot topped with grated parmesan cheese, yumm!
