Ground Hot Chilli. Red Hot! Well, actually, in the case of chillies, it’s the white that contains the heat! The fruits, also known as pods, come in a variety of colours, shapes and sizes with pale yellow or white disc-shaped seeds that contain the majority of the heat in a chilli. Chilli can turn a dull dish into something extraordinary. Once dried, chillies are usually red and impart a full-bodied fruity, smoky flavour.

  When buying chilli powder, bear in mind that the lighter coloured powders will be hotter as they have a greater percentage of seeds. On a scale of 1 to 10 (with 10 being the hottest) ours has a heat level around 7/10.
