Yellow split peas. Like green split peas, they cook swiftly (in around 45 minutes) and form a puree when ready. Yellow split peas are similar to Channa Dhal and Toor Dhal. These peas have a soft texture and a mild, often earthy flavour. Best when cooked with assertive flavourings like garlic, lemon and onions.
